Chorizo & Potato Tray Bake

Breakfast, lunch or Dinner this recipe delivers.

This dish comes together in ≈ 45 min and will feed 4 - 6. Don't forget the bread!

Ingredients:

2 lbs new Potatoes
1 head of Kale (dealers choice)
1 LB Chorizo Sausage
6 Eggs
Olive Oil
Tex Mex Spice Mix
1 Lemon, Juiced and Zested.

How to:

  1. Turn the oven on to 425° with a rack in the top 1/3rd. Line a half sheet pan with parchment paper or a silicone baking mat.
  2. Quarter your potatoes, and strip the Kale leaves from the stalks, ripping into bite sized peices piling all the veggies into the middle of the pan. Zest then halve your lemon.
  3. Generously cover the pile in 2-3 Tbsp of olive oil and squeeze out the juices from the lemon halves. Then dust the pile with ≈2 Tbsp of your spice mixture.
  4. Using your hands churn the mixture ensuring most pieces get as much coverage as possible. Pour 1/4C water onto the pan and cover with Tinfoil. Bake for 20 Min.
  5. Slice Chorizo into ¼” coins and set aside.
  6. Remove Pan and foil, pour the chorizo coins on top and using thongs, mix Chorizo in the accumulated juices. Returning the pan to the oven for 12-15 min until the sausage is browned and the kale is crispy.
  7. Remove the pan, and create 6 “nests” in the sausga/potato mixture. Crack the eggs into each space and season with salt and pepper. Bake for 3-5 minutes until Eggwhites are set, and the yolks are still jiggly. Serve with toasted bread any time of day!
